
Low Carb Peanut Butter Mug Cake
This mug cake is so good you can have it for dessert or any time of day. I like having it for breakfast with a cup of coffee. It’s becoming one of my favorite recipes because it’s so quick and easy to make.
Ingredients:
- 2 Tablespoons peanut butter*
- 1 egg
- 1/4 teaspoon baking powder
If you want to make it sweeter you can add Erythritol or Stevia drops, but it really doesn’t need it.
* Use an all natural peanut butter with no added sugars.
Depending on which peanut butter you use in the recipe, there are approximately:
21g Fat, 14g Protein, 4 net carbs, and 270 calories per mug cake.
Instructions:
Add peanut butter into a mug or ramekin. Mix in baking powder. Add egg and mix until completely incorporated into the peanut butter.
Microwave for 90 seconds and it’s ready to eat right from the mug!
