Low Carb Coconut Flour Rolls

Low Carb Coconut Flour Rolls

At only 1.3 grams of net carbs these dinner rolls are quickly becoming a favorite.  The recipe is super easy to follow and you can whip up a batch in no time.  I made nine rolls out of this batch but thought they were a little small.  Next time I think I’ll try making them a little bigger and get six out of the batch.  They taste great plain but I cut one in half and toasted then topped with some cream cheese and it was delicious!  (Original recipe from Ketoconnect.net)

  • 1/2 cup Coconut flour
  • 2 tbsp Psyllium Husk powder
  • 1/2 tsp Baking powder
  • 1/4 tsp salt
  • 3/4 cup Water
  • 4 large eggs
  • 4 tbsp Butter

Preheat oven to 350 degrees Fahrenheit
Combine all of the dry ingredients (coconut flour, psyllium husk powder, baking powder, salt) and mixing thoroughly.
In a separate bowl beat  eggs with a hand mixer. Add melted butter and water and continue mixing until combined.
Pour the dry ingredients into the wet ingredients and continue mixing until the dough becomes thick and well blended.
Bring together to form a ball.
Form into 10 dinner rolls and place on a greased baking sheet. (Larger rolls can be made but make sure to add a few minutes to the baking time.)
Bake for 30-35 minutes at . Enjoy!

Tip:  If rolls need to brown a little more for a richer color, put under broiler for a minute or so.  Make sure you watch carefully so they don’t burn!
